Quinoa Patties –vegetarian and gluten free

Just a quick recipe for those who may like it.  I made these last night to take a break from meat and they were amazing.  Also good cold in my lunch today.

What you need:

1 cup of quinoa, rinsed and drained

2 cups of water

1/2 Tablespoon butter

1/4 tsp salt

1/4 tsp garlic powder

1/2 cup shredded cheese (I used Swiss, but you could use anything)

1/4 tsp salt to add to quinoa once cooked

2 large eggs

1/3 cup sorghum flour

Coconut oil to fry patties in

How to do this:

Add quinoa, water, 1/4 tsp salt and butter to a saucepan and bring to a boil.  Turn down to a simmer and cook for approximately 20 minutes until there is no excess liquid.  Transfer to a large mixing bowl to cool.

Once cool, add all the other ingredients and fry in a nonstick pan with coconut oil over medium high heat, about two minutes on each side until golden brown.

I served these with some sautéed mushrooms and a salad.  Yum!
