These bars are easy to make, and are a really healthy snack for yourself or the kiddos (as long as nuts are not an allergy issue). Loaded with different nuts and seeds, the bars have tons of protein and good fats for your body. Plus, a thin coating of chocolate makes them taste just like those little peanut butter cups from the store, minus all the sugar and preservatives.
What you need to make these:
A food processor
3/4 – 1 cup nut of your choice (I used walnuts)
1/3 cup shredded, unsweetened coconut
1/3 cup ground flax seeds
1/2 cup nut butter of your choice (I used a natural peanut butter in this one)
3 Tbs of melted coconut oil (plus some for greasing your pan and 1 tsp for the chocolate topping)
1/2 tsp vanilla extract
2 Tbs pure maple syrup
1/4 tsp of pink Himalayan sea salt
1/3 cup semi sweet chocolate chips
How to make them:
Put your nut butter, nuts, maple syrup, vanilla, salt, flax meal, coconut and melted coconut oil in a food processor and pulse until the nuts are ground into a pretty smooth paste.
Spread mixture into a 8×8 baking dish, pre greased with coconut oil and press it smooth with your hands. Pop it in the fridge and make your chocolate topping.
Put 1/3 cup of semi sweet chocolate chips into a microwave a safe bowl and add 1 tsp of coconut oil. Microwave for 25-30 seconds and stir until smooth. Pour on top of your nut bar mixture and spread it with a spatula until it is even and covers everything.
Refrigerate again for at least 30 minutes, then cut into thin bars or squares, using a spatula to remove from the baking dish cleanly. Store in the refrigerator and enjoy as a healthy snack.
